Back in the eighties not a lot of people knew about real-bread except of course your granny and anyone who had been around pre1970s. Aidan however was one of those rare young people who did know. He started baking the Artisan way at the tender age of 16 and never looked back. Fast forward 40 years and Aidan has a reputation like no other. He started his career at the Celtic Bakers in London before moving on to work for River Cottage and set up his own Independent Artisan Bakery known as The Phoenix Bakery in Dorset. It was here that the idea of the dough anarchist was born. Appalled by the state of the nation's health and lack of education around real-food, Aidan started a campaign to put the soul back into baking and to put real-bread back on the table. People loved the idea and soon there were many more dough anarchists rising up to follow Aidan's message. He has worked tirelessly as an Ambassador for The Real Bread Campaign, and to spread the real-bread message appearing regularly at the legendary Cake and Bake show and implementing many baking classes around the country. Always hands-on, Aidan has never lost his passion for Baking taking up a role as Head Baker at the Flint Owl Bakery and, more recently, teaching Apprenticeships at One Garden Brighton. He regularly lectures at Plumpton College as well as offering private consultancy work and pop-ups. He firmly believes that baking is for everyone to share and learn - all genders, all ages, and all cultures.
